Why it blooms purple

Butterfly pea flower carries natural pigments that change colour with acidity. On their own they steep a deep blue. Hibiscus brings a gentle tartness to the blend, and as the two meet in the cup, the colour moves from blue toward violet.
Add a squeeze of lemon and it shifts brighter still.
